Fruit Processing
The production of "OTAROFF" fruit spirits starts from the field, when quality fruits and berries are obtained from our partner farmers. Only healthy and sun flavored fruit is selected, which is washed in the factory after being checked once again, crushed with a fruit grinder, all the stones are removed with a stone-cutting machine. And the grapes are crushed and then squeezed, separating the skin and the stones. The resulting slurry or juice is pumped to the fermentation chamber.

Fermentation
In the fermentation room, the pH is regulated at 18-20 degrees, then it is fermented for up to 28 days with high-quality natural German yeasts specially designed for fruit brandies, depending on the type of fruit. At the end of the fermentation, a dry fruit wine is produced.

Distillation
The dry fruit wine undergoes the first distillation, which results in the production of low wine with 15-40% ABV. The obtained low wine is distilled for the second time, during which the "head", "heart" and "tail" fractions are separated. The "head" or, to put it simply, the bad fraction, including the bulk of methanol, is removed and is not used anywhere else. The "heart" or good fraction starts at 85% and ends at 60-76%, depending on the type of fruit, and the "tail" ends at 5%. For bottling, only the heart is used, which after distillation, then rests in stainless steel containers for at least 6 months, and then is brought to the appropriate ABV with high-quality natural spring water. Then it is non chill filtered and bottled.

The nuances of distillation
Separation of the above-mentioned "head", "heart" and "tail" fractions during intermittent group craft distillation is not a standard process is carried out by the decision of the distilling master, based on the work of almost all his senses. This is the reason for the taste of the resulting fruit spirits, which, in fact, are not repeated by another manufacturer.

The secret of the premium quality of  “OTAROFF” products is that no chemical, taste or other additives, as well as sugar, are used during the whole production process. Only fresh, well-ripened fruits are used for making our fruit brandies. As a result, 10-25 kilograms of fruit or berries are used to get 1 liter of fruit spirit. We try to get the whole range of fruits directly from the farmers. The whole process, from harvesting to bottling, is done by hand. Our daily work is aimed at providing our consumers with the fruit brandies that meats the best quality indicators.
